The grapes come from a single plot in Dizy, a Premier Cru, "Le Bas de Moque-Bouteille." After destemming, the Pinot Noir skins remain in contact with the juice for 24 hours. This maceration brings out specific red fruit aromas and the "blood red" color that gives this style of Champagne its name. No wine press is used. Only the drained juice undergoes fermentation, once in tank and again in the bottle, for champagne production.

On the nose, aromatic and complex, this cuvée develops aromas of red fruits, blackberries, wild strawberries and a light and delicate hint of sour cherry, which further enhances the aromatic spectrum.
After the first sip, the freshness gradually gives way to soft notes of red fruits, ending with praline aromas. A very long finish makes this a particularly dense and balanced wine.

Pairings: A wide range of sensations unfolds when served with venison, pigeon, duck, roasted foie gras with cherries, or lamb. It also blends pleasantly with curry flavors. For dessert, it pairs well with a red fruit salad or a dark chocolate cake.
